Sopa de kale e hortelã / Kale and mint soup

Chegou aquela altura do ano em que muitos de nós vão para o trabalho e regressam a casa sem ver a luz do dia. Eu tenho tendência a murchar nesta altura de transição, mais alguém sente o mesmo? As minhas pálpebras parecem pesar 200 quilos ao acordar, tenho a sensação de que os meus músculos não têm força, segundo dizem fico rabugenta (pff, até parece!!), o meu corpo pede comidas mais fortes e fico tão sonolenta que passo o dia a uh-ahhhhhhhh bocejar. Só de escrever isto acabei de bocejar. E ao reler o parágrafo bocejei outra vez. Impressionante!

Enquanto vivi em Londres, esta sensação manifestou-se mais fortemente por haver menos sol e os dias serem mais curtos. Tantas vezes que tinha tarefas para fazer e que fui "só sentar-me durante cinco minutos" para acordar três horas depois... Que frustração!

Apercebi-me de que não podia contar com a minha produtividade ao fim do dia e decidi maximizar as minhas manhãs. Na verdade, há alguns passos importantes como preparar a roupa, a mala e a marmita que devem ser feitos na noite anterior. Comecei a acordar mais cedo e a beber um copo de água com limão ao acordar, para acabar com a sensação de estar grogue. Comecei também a fazer exercício de manhã. Utilizar um despertador que simula a luz natural tornou o levantar mais fácil e escolher uma boa banda sonora ajuda a aumentar os níveis de energia - para mim listas do Spotify como Have a Great Day!, Feelin Good e 70s FM Radio Rider ajudam-me a ligar o motor. Fazendo alguns ajustes na minha rotina matinal, consegui sair de casa com mais energia em vez de me arrastar para o trabalho.





Durante o dia tento fazer pausas frequentes ou ficar de pé, se não me puder ausentar da secretária. Levantar-me para beber água, enquanto falo ao telefone, numa reunião e nos transportes rompe com a monotonia e mantém-me alerta.

Ao almoço evito comidas pesadas que me deixem sonolenta (já sabemos que não é preciso muito para isso), mas procuro escolher alimentos nutritivos, que mantenham os meus níveis de energia durante o dia. Dar uma volta durante a hora de almoço também é revigorante, embora seja difícil quando está mau tempo. Inevitavelmente, por volta das 15.00 ou 16.00, chega a quebra da tarde e, apesar de jurar que os donuts que o meu colega trouxe estão a gritar o meu nome, eu venho munida de frutos secos, fruta e muita água. Um boost de proteína, gordura para o corpo queimar e hidratação, o que é muito melhor do que comer os donuts, ter uma sugar rush e quebrar outra vez. Mantenho-me afastada das bebidas com cafeína a partir das 15.00, para ter a certeza que não interferem com o meu precioso sono mais logo. Sim, admito, a esta hora já começo a pensar no momento em que chego à caminha.

Quando o trabalho acaba, vem o maior desafio: a viagem de regresso. Ainda que tenha saído do trabalho com alguma energia e um sorriso no rosto, o ar saturado, os rostos sérios, os empurrões e a pressa constante descarregam-me as baterias. Entra a banda sonora em ação novamente! De pé na viagem de regresso, bato o pé, danço com os dedos, desafio-me a subir as escadas dois degraus de cada vez, entro em corridas com outras pessoas sem elas saberem e tudo me serve para me entreter até chegar a casa.

Finalmente em casa, sei que me espera um bom banho e uma sopa quentinha. O truque é fazer um panelão no fim de semana e usufruir durante toda ou grande parte da semana. Sopas e estufados de vegetais são jantares ou acompanhamentos práticos, reconfortantes e saudáveis para durante a semana. Além disso, são a forma ideal de utilizar vários vegetais que vão ficando esquecidos no frigorífico.

Claro que tinha que ser uma sopa verdinha para o blog, mas gosto de variar os ingredientes, embora muitas vezes a base seja a mesma: cebola, cenoura e courgete. Umas vezes gosto de sopas mais entulhadas, com muito para mastigar, outras opto pelos cremes, aos quais junto sementes na hora de servir. Não importa a variedade, sei que vou poder recarregar as baterias enquanto o calor da sopa me ajuda a relaxar. E, por fim, é quase hora de ir para a cama!

E por aí, quais são as tuas estratégias para lidar com os dias cinzentos? Alguém tem dicas para vencer esta falta de energia quando se trabalha em casa, por exemplo?

Sopa de kale e hortelã

Ingredientes:
  • 1 cebola
  • 2 cenouras
  • 1 courgete
  • 1 alho francês
  • 2 talos de aipo
  • 1 molho de kale
  • 1 molho de hortelã
  • 1 cubo de caldo de vegetais
  • Azeite
  • Sal
  • Água

Método:
Lavar bem todos os vegetais. Descascar e partir a cebola em quartos. Partir as cenouras, a courgete, o alho francês e o aipo em pedaços aproximadamente do mesmo tamanho. Para grande desgosto da minha avó, eu não descasco nada porque não sou picuinhas, mas se te faz confusão usar a cenoura com casca, diverte-te a descascá-la.

Numa panela grande, adiciona a cebola e o azeite e refoga gentilmente adicionando os restantes vegetais partidos antes da cebola estalar. Deixar cerca de 2 minutos e mexer.

Juntar água até cobrir os vegetais e consoante a espessura preferida e adicionar o caldo, temperando com sal. A quantidade de água pode ser acertada no fim. Deixar ferver cerca de 20 minutos, lembra-te que se tapares a panela podes baixar o lume e poupar energia, enquanto mantens a ebulição.

Adicionar, então, o kale partido grosseiramente e a hortelã, reservando algumas folhas de hortelã para guarnecer. Deixar ferver cerca de 5 a 8 minutos ou até o kale ficar tenro.

Deves dar tempo para que a sopa arrefeça ligeiramente antes de a passares com uma varinha mágica. Podes, então, verificar a espessura da sopa e se estiver demasiado grossa podes adicionar água e colocar ao lume até levantar fervura. Caso esteja muito líquida, leva-a ao lume e deixa ferver destapada até atingir a espessura pretendida.

Ao servir polvilhar com sementes e juntar uma colher de iogurte e algumas folhas de hortelã.

It’s that time of the year again when a lot of us go to work and come back home without ever seeing the daylight. I just tend to wither in this time of transition, does anyone else feel the same? My eyelids feel like they weigh a ton when I wake up, my muscles feel weak, some people say I get grumpy (smh, as if!!), my body asks for heartier meals and I feel so sleepy that I spend the whole day y-awwwww-ning. Even writing this made me yawn. And reading it again made me yawn. Pretty impressive.

While I lived in London, this happened even more, due to the lack of sun and the days being shorter than in Portugal. So many times I had a to-do list to go through and I went to “just sit for five minutes” only to wake up three hours later… how frustrating!

I realized I couldn’t rely on being productive at the end of the day and decided to maximize my mornings. Actually, some important steps happen the night before, such as picking my outfit, make sure I have everything I need in my bag and pack my lunch. I started waking up earlier and drinking a glass of water with lemon juice first thing in the morning, to kick away the sleep inertia. I also started exercising in the morning. Waking up to a natural light alarm clock has made getting up easier and picking a great soundtrack helps to boost my energy level – Spotify playlists like Have a Great Day!Feelin Good and 70s FM Radio Rider get my motor runnin’. By making a few changes to my morning routine I managed to leave the house with more energy instead of dragging myself to work.





During the day I try to get frequent breaks or stand as much as possible, if I can’t leave my desk. I stand while I drink water, speak on the phone, attend a meeting and commute as it breaks away the monotony and keeps me alert.

For lunch I avoid eating heavy foods that can make me sleepy (we already know it doesn’t take much), instead I try to choose nutritious meals, that will maintain my energy going throughout the day. Go for a walk at lunch is really reinvigorating, but it can be hard when the weather is terrible. Inevitably, I hit the afternoon slump around 3 or 4pm and, even if I swear I can hear the donuts my colleague brought to work scream out my name, I came armed with nuts, fruit and plenty of water. A protein boost, good fats to fuel the body and rehydration, which is so much better than eating a donut, having a sugar rush and crashing again. I stay clear of caffeinated drinks from 3pm onwards to make sure they don’t mess with my precious sleep. Yes, I admit that by this time I’m already thinking about that sweet moment when I get to my bed.

When the work is over, I’m faced with yet another challenge: the commute. Even if I left work with some energy left and a smile on my face, the stuffy air, the serious faces, being pushed around and the constant rush leave me feeling drained. Enter the soundtrack once again! Standing on the train, I tap my foot, I drum my fingers, I challenge myself to go up the stairs two steps at a time, I race other people without them knowing and everything keeps me amused until I arrive home.

At last when I arrive home I know I have a steamy shower and a warm soup waiting for me. The secret is to cook a big batch of soup during the weekend and enjoy it throughout the whole or most of the week. Soups and veggie stews are easy, comforting and healthy dinners or sides, ideal for week days. They’re also perfect to use those vegetables that end up forgotten in the fridge.

It had to be a green soup for the blog, of course, but I like to vary the ingredients, even though the base is often the same: onion, carrots and courgette. Sometimes I’m into heartier soups, with a lot to chew on, others I prefer a creamy one, to which I usually add seeds. No matter the version I choose, I know I’ll be able to charge my batteries while that warming soup helps me relax. And, finally, it’s almost time to go to bed!

Kale and mint soup

Ingredients:
  • 1 onion
  • 2 carrots
  • 1 courgette
  • 1 leek
  • 2 celery sticks
  • 1 bunch of kale
  • 1 bunch of mint
  • 1 cube vegetable stock
  • Olive oil
  • Salt
  • Water

Method:
Wash all the vegetables thoroughly. Peel and cut the onion in quarters. Chop carrots, courgette, leek and celery in approximately even pieces. It breaks my nan’s heart, but I don’t really peel vegetables often because I’m not very picky. If peels bother you somehow, go ahead and have fun.

Start by gently sautéing the onion in the olive oil, adding the remaining chopped vegetables before the onion starts to crack. Leave for about 2 minutes and stir.

Cover the vegetables with enough water, depending on how thick you'd like the soup and add the vegetable stock. The water can be adjusted in the end. Season generously with salt. Let it boil for about 20 minutes and remember that if you cover the pan with a lid, you can lower the heat and save energy, while keeping it boiling.

Then, add the kale, roughly chopped, and the mint, keeping some mint leaves for garnishing. Let it boil for about 5 to 8 minutes or until the kale is tender.

Let it cool down for a bit before blending it with a hand blender. You can then check the thickness of the soup and if it’s too thick add water and heat it until it starts boiling again. If it’s too thin, heat it and let it boil until it thickens.

Serve sprinkled with some seeds of your choice, a scoop of yogurt and some mint leaves.
